Vegan Chipotle Tofu Taco Bowls

I thought this would be the perfect dinner to bring out for healthy January! This meal provides protein with the tofu and quinoa along with vitamins in the veggies! It’s loaded with spicy flavor and super filling. I thoroughly enjoyed my first experience with a vegan meal and I can see myself dabbling in some other vegan ideas moving forward. I like to provide you with a range of yummy things to eat and I thought this was a great dinner idea for those interested in sampling some vegan cuisine. Vegan Chipotle Tofu Taco Bowls

Ingredients

  • 1 1 Block Extra Firm Tofu

  • 1 1 Bell Pepper Sliced

  • 1 1 Small Sweet Onion Sliced

  • 2 2 Chipotle Peppers with 1 Tbsp Adobo Sauce

  • 1 cup 1 Vegetable Stock

  • 1-2 tsp 1-2 Oregano

  • S&P to taste

  • 1 cup 1 Quinoa

  • 2 cups 2 Water

  • 1/2 cup 1/2 Vegan Cheddar or Mozzarella Cheese

  • 2 cups 2 Shredded Lettuce

  • 1/2-1 cup 1/2-1 Diced Tomatoes

  • Radishes, Jalapeños & Limes for Garnish

Directions

  • To begin, in a blender, purée your chipotle peppers with adobo sauce and place in a bowl. Add your vegetable stock and whisk
  • Cube your tofu and add to your chipotle marinade. Set aside for 15-20 minutes while you slice your veggies and preheat your skillet
  • Add a spray of olive oil or avocado oil to your preheated skillet and drop down your peppers and onions. Sauté until translucent
  • Add tofu with marinade. Sprinkle with oregano, S&P. Sauté until liquid has evaporated
  • Squeeze a half of a lime over tofu mixture and give it one final toss before you build your bowls
  • While you’re cooking your tofu, add water and quinoa to a small sauce pot. Bring to boil then cover and reduce heat to low. Simmer for 20 minutes until quinoa is tender
  • To build bowls, add quinoa and lettuce to the bottom of your bowls. Top lettuce with tomatoes, radishes, jalapeños and any other topping you like. Top quinoa with your tofu mixture and some vegan shredded cheese. ENJOY!

Notes

  • This was my very first attempt at making anything Vegan. I did research some things to make sure I was using all approved ingredients because I certainly didn’t want to botch my first try. LOL. I found my shredded vegan cheese and tofu at my local Aldi.
