I thought this would be the perfect dinner to bring out for healthy January! This meal provides protein with the tofu and quinoa along with vitamins in the veggies! It’s loaded with spicy flavor and super filling. I thoroughly enjoyed my first experience with a vegan meal and I can see myself dabbling in some other vegan ideas moving forward. I like to provide you with a range of yummy things to eat and I thought this was a great dinner idea for those interested in sampling some vegan cuisine.
