Sumac Salmon Bites with Lemony Za’atar Rice & Lemon Mint Yogurt Drizzle

This amazing bowl is loaded with sooo much goodness! The entire time I was eating it, I kept commenting on how good it was with the combination of flavors. I recently was introduced to both sumac and za’atar as seasoning choices, and I can’t believe I hadn’t heard of them before! Sumac is such a fun spice as it adds a tartness and a hint of sweetness to your food! Paired with the mix of herbs and zingy brightness of the Za’atar seasoning, this is the perfect bowl of middle eastern flavors! I love the refreshing yogurt drizzle that just adds that additional pop of yum! This bowl is super healthy and needs to be on your try it list! I promise, you’ll be adding to your favorites for sure!

Sumac Salmon Bites with Lemony Za’atar Rice & Lemon Mint Yogurt Drizzle

Ingredients

  • *For the Salmon*

  • 1 lb 1 Salmon

  • 1 Tbsp 1 Olive Oil

  • 2 tsp 2 Sumac Seasoning

  • S&P to taste

  • *For the Lemony Za’atar Rice*

  • 1 cup 1 White Rice

  • 2 cups 2 Water

  • 2 tsp 2 Za’atar

  • 1/2 tsp 1/2 Salt

  • 1 1 Lemon Zested & Juiced

  • *For the Lemon Mint Yogurt Drizzle*

  • 1/2 cup 1/2 Non fat Greek Yogurt

  • 1/4 cup 1/4 Fresh Mint

  • 1 1 Lemon Zested & Juice of 1/2 Lemon

  • 1/2 tsp 1/2 Ground Coriander

  • 1/4 tsp 1/4 Salt

  • 1/4 tsp 1/4 Pepper

Directions

  • To begin, preheat oven to 400. Make rice by adding rice, water, lemon zest/juice and seasonings to pot. Bring to boil then reduce heat, cover and simmer for 20 minutes until rice is fluffy
  • While rice is cooking, cube your salmon. Coat with olive oil and season with Sumac and S&P. Place in oven and bake for 15 minutes
  • While salmon is baking, make your yogurt drizzle by adding all ingredients to your blender and blending until smooth.
  • To build bowls, place rice in first and top with salmon bites. Drizzle yogurt sauce on top and side with your favorite veggie!

Notes

  • To make this dinner even healthier for the carb conscious, sub riced cauliflower and season the exact same way! That would still be D to the LISH!
