Lemon Poached Chicken with Greens & Beans

This is the perfect, healthy meal that is loaded with all the protein and vitamins! The best part is, how easy it is to throw together! I started with some chicken breast, chicken stock and some seasonings. After poaching the chicken for 10 minutes or so, I removed the chicken and added some hearty white beans, kale and broccoli to the poaching liquid. Once the kale was wilted and broccoli was tender, I spooned the brothy goodness into a bowl and topped with some sliced chicken. It had so much flavor from being poached in the stock with lemon, garlic and herbs. The red pepper flake I added was the perfect amount of heat to play off the freshness of the greens. This healthy dinner is a staple in our house because it checks all the boxes for me! Easy, Healthy and D to the LISH! Give it a try and tell me what you think!

Ingredients

  • 1 lb 1 Boneless Skinless Chicken Breast

  • 32 oz 32 Chicken Stock

  • 2 2 Cloves of Garlic

  • 1 1 Lemon Freshly Squeezed

  • 1 1 Bay Leaf

  • 1 tsp 1 Oregano

  • S&P to taste

  • 1 1 Bunch of Kale Chopped

  • 1 1 Can of Cannellini Beans Drained

  • 1 1 Broccoli Crown Chopped

  • 1/2 tsp 1/2 Red Pepper Flake

Directions

  • To begin, place chicken breast in pan over medium/high heat. Add chicken stock, bay leaf, garlic, oregano and S&P. Place lid on skillet and heat to boiling
  • Once liquid is boiling, turn burner to low and simmer for about 8-10 minutes until chicken reads 165 with a thermometer
  • Pull chicken from skillet and add drained beans, chopped kale, broccoli and red pepper flake. Stir and place lid back on skillet to steam and wilt
  • Once veggies are done, spoon into bowl and top with sliced chicken. Enjoy with a squeeze of lemon and some additional fresh herbs
