Crispy Chickpea Salmon Caesar Salad

I love a flavorful caesar salad! This take on the classic caesar uses crispy oven roasted chickpeas instead of croutons. Chickpeas are so versatile and add another level of nutrients to this salad. The salmon is the perfect addition to round out this salad that would be perfect for lunch or dinner! You can prepare your salmon whichever method you prefer. I oven roasted mine but the skillet, broiler or grill would work just as well. Choose your favorite caesar dressing, grab a glass of your go to white wine and DIVE IN!

Ingredients

  • 1 lb 1 Salmon

  • 15 oz 15 Can of Chickpeas(Garbanzo Beans)

  • 1 1 Head of Romaine Lettuce

  • 1/2 cup 1/2 Shaved Parmesan

  • Caesar Dressing of Choice

  • 1 Tbsp 1 Spanish Paprika

  • 1 Tbsp 1 Brown Sugar

  • 2 tsp 2 Cumin

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Onion Powder

  • 1 tsp 1 Salt

  • 1/2 tsp 1/2 Cayenne

  • tsp Black Pepper to taste

  • 2 Tbsp 2 Olive Oil

Directions

  • To begin, preheat oven to 425. Drain and rinse chickpeas. Spread out onto sheet pan and pat dry with paper towel. Mix together spanish paprika, brown sugar, cumin, garlic powder, onion powder, cayenne, salt and pepper. Toss chickpeas in 1 – 1.5 Tbsp olive oil. Sprinkle 1 Tbsp of spice blend on chickpeas and toss to coat. Place sheet pan in oven and roast for 20 minutes, tossing chickpeas half way through. Set chickpeas aside to cool
  • Brush a couple teaspoons of olive oil on salmon and sprinkle seasoning blend on. Oven roast salmon at 400 degrees for 20 minutes
  • Rough chop romaine lettuce and place in serving bowl. Add dressing and toss. Sprinkle with shaved parmesan and crispy chickpeas. Place salmon on top and ENJOY!

Notes

  • You will have leftover spice blend left. What a gift am I right?! Store in your pantry and use it on all your favorite things! It would be great on chicken, pork, fish, veggies…whatever you want to try it on! I call for 1/2 tsp cayenne in this blend because I enjoy that extra kick of spice, but if you are not a fan of that much spice, feel free to decrease to 1/4 tsp or you could omit completely.
