Lemon & Thyme Poached Asparagus

I love a healthy, refreshing and crisp side dish. I especially love one that is super easy to prepare. This is the perfect option for a quick, Summertime, weeknight side dish with some grilled chicken. The poaching method is such a healthy option to prepare meats and veggies when you’re watching your calorie and fat intake. I add fresh lemon zest, juice and thyme sprigs to my poaching liquid to infuse the flavor into the asparagus. It has quickly become my absolute favorite way to cook asparagus!

Lemon & Thyme Poached Asparagus

Ingredients

  • 1 1 Bunch Asparagus

  • 1 1 Lemon Zested & Juiced

  • 2-4 2-4 Sprigs of FreshThyme

  • S&P to taste

Directions

  • To begin, wash and trim bottoms of asparagus. Place in skillet and fill with water enough to almost cover the asparagus but not quite
  • Turn stove on medium/high heat and season asparagus with salt and pepper. Zest lemon and squeeze lemon juice in water. Add thyme sprigs. Bring water to a low simmer and poach for 5 minutes until the asparagus turn bright green. If you like your asparagus more on the tender side, just poach until you reach your desired tenderness and remove from poaching liquid
  • Top with fresh grated Parmesan cheese and a squeeze of fresh lemon
