Arugula Shrimp Salad with Honey Lemon Vinaigrette

I love an easy, refreshing salad to enjoy on my lunch break and this is one of my favorites! I will never forget where I was when I first tasted this masterpiece! It was at Newk’s Eatery in Waco, Texas. I had just moved to Dallas and was traveling with my boss at the time who loves to try new places, so he went to Yelp and found Newk’s! I ordered this salad and I was smitten from the first bite! I’ve never ordered anything else at Newk’s. I’m sure their other food is quite good, but I can’t seem to pull myself away from this D to the LISH salad! I wanted to see if I could recreate it at home and after a couple attempts at the dressing, I got it!! This salad has minimal ingredients, but is packed with flavor! I used Old Bay seasoning on my shrimp which was sooo good, but you can use whatever type of seasoning you like on your shrimp. Give it a try and you’ll see why I love it so much!

Ingredients

  • 1 pkg 1 Arugula

  • 1/2 – 1 lb 1/2 – 1 Raw Jumbo Shrimp Peeled & Deveined

  • 2-3 Tbsp 2-3 Butter

  • 1 tsp 1 Old Bay Seasoning or Seasoning of choice

  • 6 6 Cherry Tomatoes

  • 1 1 Small Avocado or 1/2 of a Large

  • 1/4 cup 1/4 Feta Cheese Crumbles

  • 1/2 1/2 Small Shallot

  • 1 clove 1 Garlic

  • 1/2 cup 1/2 Olive Oil

  • 2 Tbsp 2 Lemon Juice

  • 2 Tbsp 2 Honey

  • 1 Tbsp 1 Apple Cider Vinegar

  • 1 Tbsp 1 Dijon Mustard

  • S&P to taste

Directions

  • Begin by making dressing. In a mason jar, grate garlic and shallot and add olive oil, lemon juice, honey, apple cider vinegar, dijon mustard and S&P. Place lid on and shake to emulsify. Set aside
  • In a skillet, add butter and once melted and starting to brown, add peeled raw shrimp and season with your favorite seasoning. Flip after 2 minutes and cook for another minute or two. Remove from heat and let cool while you build the salad
  • To build the salad, begin by placing arugula on your salad platter. Add 2-3 Tbsp of your dressing and massage in to your greens. Place shrimp, diced avocado, sliced cherry tomatoes and a sprinkle of feta crumbles on top. Enjoy!
