Twice Baked Loaded Chipotle Sweet Potatoes

I had a GINORMOUS sweet potato giving me “the eye” every time I would look in the pantry and I needed to figure out what to do with him. I came up with this easy idea with things I already had in my fridge and pantry and I have to tell you, it was a HUGE WIN in the flavor department. This is a perfect idea for a vegetarian main dish or it could even be a side dish as well. Add it to your next fiesta party and your guests will be asking for the recipe!

Ingredients

  • 2 2 Large Sweet Potatoes

  • 1 1 Chipotle Pepper in adobo sauce

  • 1 tsp 1 Adobo sauce from canned chipotles

  • 15 oz 15 Black Beans

  • 1 cup 1 Shredded Cheddar Cheese

  • 1-2 tsp 1-2 Olive Oil

  • S&P to taste

  • Guacamole, Sour Cream, Queso Fresco, Cilantro and Lime for garnish

Directions

  • Preheat oven to 400 degrees
  • Cut sweet potatoes in half lengthwise, brush with olive oil and season with salt and pepper. Bake for 45-55 minutes until potatoes are tender and can be scooped out into your mixing bowl. Leave oven on while you mix your sweet potato filling
  • Chop chipotle pepper or use a blender. Once chopped very fine, mix it with 1 tsp of adobo sauce. Add black beans and cheddar cheese. Mix everything together and scoop filling into potato skins
  • Top loaded sweet taters with additional shredded cheddar cheese and bake for 15 minutes until cheese is melted and browned.
  • Top with your favorite garnishes and ENJOY!

Notes

  • You can add whatever you’d like to these sweet potatoes! Make them your own creation and enjoy the flavor!
  • A squeeze of lime to top them is a nice refreshing touch.
