Easy Breezy Bok Choy Wonton Soup

Need an idea for a quick lunch that is loaded with flavor and all the goodness?! Well, you’re in luck because I have developed the easiest soup for you to whip together that is minimal ingredients and sooo D to the LISH! I start with some sautéed Baby Bok choy in refined sesame oil with garlic. Then, I add some chicken stock with soy sauce. I simmer the Bok choy and add some yummy dumplings or wontons. I finish the broth off after it’s ladled in bowls with some sesame chili oil for a nice spicy touch! This is the perfect bowl of comfort when you’re feeling under the weather or just want to warm yourself up on a chilly day! Give it a try and this is one you’ll revisit for sure! It’s THAT easy!

Ingredients

  • 1 Tbsp 1 Refined Sesame Oil

  • 4 4 Heads of Baby Bok Choy

  • 2 2 Cloves Minced Garlic

  • 4 cups 4 Chicken Stock

  • 2 Tbsp 2 Low Sodium Soy Sauce or Coconut Aminos

  • 12 oz 12 Cilantro Chicken Mini Wontons

  • 2 tsp 2 Sesame Chili Oil

Directions

  • To begin, slice bottom off bok choy and rinse well. Pat dry
  • Heat refined sesame oil in soup pot and add bok choy and garlic. Sauté until bok choy starts to soften
  • Add chicken stock and soy sauce. Simmer until bok choy softens more and add wontons or dumplings for the last 5 minutes or so. Simmer until heated through
  • Ladle in bowls and finish with 1 tsp of sesame chili oil in each bowl. Enjoy!

Notes

  • You can make this soup with any type of dumpling or wonton that you find in your freezer section. I used my favorite Cilantro chicken mini wontons from TJ’s but you can use whatever you’d like.
