Slow Cooker Chicken Pho

I love a good noodle soup! Especially one that is loaded with fresh herbs! I like to add ALL THE HERBS to my Pho. There isn’t anything I wouldn’t welcome to this Pho party! I developed this super easy soup for a comforting, warm weeknight meal. Using your slow cooker makes this recipe super easy to enjoy during your busy work week! The broth is D to the LISH and the rice noodles are the perfect addition to this juicy chicken pho 🍲 Dive into a bowl and ENJOY!! You will definitely be adding this soup to your make again list!

Crockpot Chicken Pho

Ingredients

  • 4-6 4-6 Bone in Skin on Chicken Thighs

  • 1 1 Onion quartered

  • 6 cups 6 Chicken Stock

  • 1/4 cup 1/4 Soy Sauce

  • 2 Tbsp 2 Ginger Paste or 3 inch Ginger peeled and grated

  • 1 Tbsp 1 Lemongrass Paste or 1 Lemongrass Stalk

  • 2 tsp 2 Whole Peppercorn

  • 2 tsp 2 Whole Coriander

  • 6 6 Cloves Peeled, Whole Garlic

  • 2 2 Star Anise

  • 1 1 Bunch Cilantro

  • 1 1 Package Rice Noodles

  • Mint, Cilantro, Basil, Green Onion, Jalapeño, Lime and Mung Bean Sprout to top bowls

Directions

  • In your crockpot, add stock and all seasonings. Whisk together to combine
  • Add chicken and cook on low for 6-8 hours
  • Remove chicken from crockpot and remove from bone
  • Strain broth into a bowl and discard all flavorings. Pour broth back into crockpot. Turn crockpot to high and add rice noodles. Close lid and cook rice noodles for 15 minutes or until done.
  • To build bowls, add noodles, chicken, broth and top with fresh herbs and mung bean sprouts. ENJOY!

Notes

  • You can cook your rice noodles on the stove top and add to broth once cooked for a quicker cook on the noodles.
